Zucchini and Poli Pudding

  • 400 g POLI sausage
  • 300 g zucchini
  • 150 g meaty bacon
  • 200 g onion
  • 2 chopped garlic cloves
  • 3 eggs
  • 100 g rice
  • 2 dl sour cream
  • 100 g grated parmesan cheese
  • Chopped parsley
  • Oil for sautéing
  • Salt, ground pepper

Chop the bacon into cubes and sauté on hot oil together with the chopped onion and garlic. Add the zucchini, chopped into cubes and braise until they release their juice. Add the rice, season with salt and pepper, cover and braise until the rice is half cooked. Pour in water if necessary. Remove from the stove and cool it down. When the rice is cold, add the POLI sausage, chopped into cubes, 1 egg and half of the sour cream. Place the rice into the greased baking tray. Mix 2 eggs, the other half of the sour cream and the grated parmesan cheese and pour the mixture over the rice. Bake at 150°C for about 25 minutes. Carefully open the oven, congratulate yourself on your culinary masterpiece, slice it and offer as a one-course meal. Serve with some seasonal salad.
